If you love an infusion of spice and veg, you’ll love this recipe. I just created a Veg Chilli with ingredients you’ll probably find lurking at the back of your cupboard or fridge.
First, I cooked on a medium heat one aubergine (but personally I wouldn’t cut too many as their taste can be overpowering), two small onions, mushrooms and peppers. Once the veg had softened and had a ‘roasted’ look I added some chilli powder, ground cumin and black pepper. I really enjoy these spices as they create a natural spicy flavour.
Lastly, I combined one can of drained black beans and two cans of chopped tomatoes. Left it to heat for 20 mins until it reduced a bit. You can also add some oregano. For me, herbs go well chilli. After you have done that, it is finished! The great thing about chilli is that you can eat it with rice, wraps and so on… It also doesn’t take too long to cook.
